Description
A gentian aperitif from the Auvergne in central France, made from the roots of the yellow gentian that grows in the volcanic mountains there. It is bittersweet and earthy with a floral lift, closer to a lighter Suze than an amaro. Serve it over ice with tonic and a lemon peel before dinner.
