Philipponnat, a Champagne house based in Mareuil-sur-Aÿ and best known for its Clos des Goisses, makes this Blanc de Blancs entirely from Chardonnay. Extra Brut means very little added sugar, so the 2018 is taut and precise, with lemon, green apple, chalk and a toasty edge. A bottle for oysters, sushi or an aperitif.
