A Levantine anise spirit that is distilled from grapes, then rested for a year, which is where the amber colour and softer edge come from. Expect licorice and dried fruit rather than the sharp white spirit you may know. Traditionally it is cut with cold water, which turns it cloudy and opens up the aroma.
